Spinach-Mozzarella-Stuffed Burgers

The key to a delicious stuffed burger is making sure the filling doesn’t ooze out during cooking. When you place the stuffing on a patty, leave a border so you can properly seal the burger.

BURGERS
1 1/2 lb. ground beef chuck (80% lean)
1 teaspoon salt
3/4 teaspoon freshly ground pepper
2 cups firmly packed spinach
1 cup (4 oz.) shredded mozzarella cheese
1/4 cup purchased basil pesto
4 large sesame hamburger buns, split
1 cup loosely packed arugula

MAYONNAISE
1/3 cup mayonnaise
2 tablespoons chopped oil-packed sun-dried tomatoes
1 tablespoon grated Parmigiano-Reggiano cheese
1 tablespoon chopped capers

1. In medium bowl, gently mix together beef, salt and pepper. Using generous 1/3 cup per patty, shape mixture into 8 (3 1/2-inch) patties 1/2 inch thick. Refrigerate while preparing stuffing.

2. Place spinach in dry large saucepan. Cover and cook over medium-high heat 1 to 2 minutes or until wilted, stirring occasionally. Drain; cool. Squeeze out any excess moisture. Chop; place in medium bowl. Stir in mozzarella cheese and pesto.

3. Mound about 1/4 cup packed stuffing in center of 4 patties; cover with remaining 4 patties, sealing edges by pressing firmly together with fingers. Gently press center of patties to eliminate mounding.

4. Heat grill. Place burgers on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Grill 10 to 12 minutes or until thoroughly cooked and no longer pink in center, turning once.

5. Meanwhile, in small bowl, whisk together all mayonnaise ingredients. Place buns on grill; grill 30 to 60 seconds or until lightly toasted. Spread each bun with 2 tablespoons of the mayonnaise. Top burgers with arugula.

PER SANDWICH: 785 calories, 51.5 g total fat (16 g saturated fat), 46 g protein, 33 g carbohydrate, 130 mg cholesterol, 1425 mg sodium, 2.5 g fiber

I HAVE EATEN THESE BURGERS BEFORE AND THEY WERE DELICIOUS. I THOUGHT YUCK, SPINACH, BUT IT WAS REALLY GOOD. I WOULD RECOMMEND IT TO EVERYONE. THANKS, PHYLLIS

Sounds great - looks so delicious and then I looked at the calories, fat, etc. and think it sure isn't a healthy one! Oh, why does it always have to be thus?!

This is so easy & yet to many times living back east there was something missing -- Spinich! Allot of families would skip the Spinich because the children would not even taste it if you told them it had Spinich..One August weekend I had a group of families from work. Three from NYC, one from Boston, two from Chicago They all loved it but I did not tell them what I had in it, after they had their dinner two of the mothers asked me what was so differrent from the year before. When I told them it was Spinich they were stunned (both were from NYC, and Jewish) I reminded them to tell the children that it was Smooth Jalapeno, NOT HOT Jalapeno they were using. Both of the mothers used it every weekend for August (Humidity) quick book, and the kids didn't ask after the first test, it is to good to be asking questions about it.

I have made this recipe many times; it is a cookout favorite! My friends are always asking me to bring these burgers to their picnics and BBQs in the summer. Even my kids love them (I make some half-size with no mayo for them) and it's a great way to get them eating some greens. I recommend putting them on a nice ciabatta or rustic bread to balance out the oozing cheese. And just remember not to overstuff them or it won't cook evenly. The only thing that gets me down about these great burgers are the calories!

I made these burgers and was surprised to see that a 16 year old boy could devour them like he did.I enjoyed them as well as my son.

I would love to experiment with this recipe and use different cheeses...maybe smoked mozzarella or Gouda! I love the mayo ingredients!

We enjoy our spinach dishes, we also enjoy our burgers. I've never thought of stuffing spinach in my burgers, but this combination sounds really quite tasty. I'm going to have to definately give this recipe a try.

You would definitely need to eat light before eating one of these based on the calories but at least the spinach is incorporating the fiber, without it, there would be no fiber in the beef. So it seems like a great idea especially for kids that are picky about vegetables, like one of my sons is. Thanks for the recipe.

What beers go well with grilled meat?

A variety of beer styles pair well with barbecued meats, but a good rule of thumb is to match the beer and the meat according to color. Grilled fish calls for a pale and spritzy Weizenbier (wheat beer) or pale ale; for chicken and pork, consider a malty amber Marzenbier (often marketed as Oktoberfest beer) or a darker, sweeter Munich Dunkel.
