Mediterranean Panzanella Salad

Since cucumbers are in season right now… you can find definitely find them at farmer’s markets. Here’s a refreshing salad idea that will keep you cool during the summer months.

Mediterranean Panzanella Salad

Ingredients:

1/2 cup KRAFT Ranch Dressing

1/2 tsp.  curry powder

6 oz. POLLY-O Fresh Mozzarella Cheese, drained, chopped

1 cup  sliced peeled cucumbers

1/2 cup small pitted ripe olives

1/4 cup  chopped red onions

3 medium radishes, sliced

1 bag  (10 oz.) torn mixed salad greens

1 pita bread, toasted, cut into bite-size pieces

 

Directions:

MIX dressing and curry powder until well blended.

COMBINE cheese, cucumbers, olives, onions and radishes in large bowl. Add dressing mixture; mix lightly.

ADD greens and pita pieces just before serving; toss to coat.

michealjc, have you tried the Mediterranean Panzanella Salad yet? If so, I hope that you enjoyed it. There is lots of other great salad recipes for you to try at Salad Center or recipes that will inspire you to create your own.

CaliCook --- our family has enjoyed panzanella salads for a number of years - tho we usually use good French or Italian bread that is a day past its prime.  Next time I stop at the Syrian bakery for their pita, I'll have to remember to save some pita for the salad.  However, we don't buy salad dressings  (make our own) so mine will be a bit different than yours.   We often make ours into a main dish - by using grilled (or whatever) seafood, poultry or meat.   Makes it easy - especially on these hot and humid summer days.   To me its wonderful how easy and delicious some of these simple recipes are ... and to think many were invented (??) as a use for leftovers!

Did anyone get a chance to try the salad? 

Jellybean4, most simple foods are delicious.   Some foods become too complicated with ingredients.  Most of the ingredients can be omitted and taste just as good.

True.  With all the different ways to make a salad, there is no reason to get bored.  Just try mixing it up and experimenting with new dressings.
